Pasta House Company House Saled

Yes, it's the famous Pasta House Salad (and dressing). Enjoy!
Ingredients:
1 head iceberg lettuce
1/2 head romaine lettuce
1 c quartered artichoke hearts, drained
1 c red onions, sliced
1 c pimientos, drained, diced
2/3 c olive oil
1/3 c Regina red wine vinegar
1 tsp salt
1/4 tsp black pepper
2/3 c fresh grated Parmesan cheese

Directions:
Wash the iceberg and romaine lettuce, allowing all water to drain completely.  Place in refrigerator to chill. When lettuce is well-chilled, remove from refrigerator. Split iceberg in half, pulling the heart of the lettuce out of both halves and breaking into small pieces. Tear the romaine lettuce into smaller pieces. Place both types of lettuce in a large mixing bowl. Drain artichokes well and add to the lettuce. Add red onion, pimientos, olive oil, vinegar, salt and pepper. Toss salad until well mixed. Top with Parmesan. Toss again and serve. Serves 4.
