Banana Buttermilk Bread

The basic but fantastic banana bread. For something more special, check out the Peanut Butter-Chocolate Chip Banana Bread.

Ingredients:
1/2 margarine or butter
1 C sugar
2 eggs, beaten
1 C buttermilk (can substitute regular milk by adding a tablespoon of lemon juice or vinegar to the milk)
2 tsp baking soda
2-1/4 C flour
1/2 tsp salt
1 tsp baking powder
2 cups (3-4) over ripe, mashed bananas
1/2 cup chopped nuts (optional)

Directions:
Cream butter and sugar; add eggs. Stir baking soda into buttermilk and add to mixture. Add bananas and flour, salt, and baking powder. Mix well. Stir in nuts. Pour into 2 greased loaf pans. Bake at 375 degrees for 1 hour (less for muffin or mini-loaf pans).
