Breakfast Casserole

It doesn't really get any easier than this.  Every time I make this, there are no left-overs. Great for hosting a large or small brunch.  I like to make them in throw away pans and toss in the freezer for later use.
Ingredients:
2 C frozen hash browns, thawed
1 C Cheddar or other shredded cheese of your choice
2 tbs onion, chopped
1/2 to 1 lb. browned sausage or bacon
4 oz (1/2 package) mushrooms, sliced
Egg mix:
4 eggs, beaten
1/2 tsp. salt
1/2 tsp. pepper
3 tbsp. milk

Directions:
Preheat oven to 350 degrees. Coat 9x13 pan with non-stick cooking spray.  Layer first six ingredients in pan.  Then mix next four ingredients and pour over layered ingredients.  Bake at 350 degrees for 45 minutes.
